5 ingredient Pear and Yoghurt Cake

I saw this viral recipe on Instagram. But it was with a vegan yoghurt (which you can use) and it didn’t have the pears which is a super delish addition. I’ve tried and tested this recipe over and over and I love it! So does the fam. It takes about 5 minutes to whip up. It is simple recipe that is packed full of flavour. You could do endless combinations like sliced bananas on top, apple or berries. The addition of cinnamon would be be yummy too. Or you can make it fruit free and just cake.

Vic and I have been using our beach cart for years as a table out and about. Not many beach carts can do this as our beach cart has strong wooden sides. Simply place a large chopping board over one end and there you have it! Beach Cart table. Sand free/grass free meals! I hope you feel inspired to get outdoors and eat cake!

Ingredients

1 1/2 cup SR flour sifted

1 cup vanilla bean yoghurt

1/3 cup olive oil

1/2 sugar

3 pears

Steps

Preheat oven to 180C. Line and grease a cake tin. In a bowl mix together flour, yoghurt, olive oil and sugar. Once a smooth batter forms spoon mix into a cake tin. Wash and dry pears. Place whole pears into cake mix and bake for 40-50 mins. Once cooled remove cake from tin and serve with extra vanilla bean yogurt or fresh cream.

Note: You can core pears. I baked them whole cores and all.
