Freezer Fudge Recipe

Say hello to your new favourite refined sugar free dessert. Our foodie friend Maddy Trueman has created a delicious and simple freezer fudge that you can make in advance and keep in the freezer for your next sweet craving. Try this at home and be sure to tag us on Instagram!

Freezer Fudge

Ingredients

1 cup medjool dates, pitted

1 cup cashew butter

1/2 cup raw cacao powder

5 tbsp coconut oil, melted

80g dark chocolate

Pinch of salt

2/3 cup toppings of your choice (freeze dried berries, pistachio, walnut, dried mulberries, goji berries, etc

Method:

  1. Line a loaf tin with baking paper.

  2. Add medjool dates to a high-speed blender or food processor. Blitz until a smooth paste forms. You may need to add a small dash of water to help everything come together.

  3. Add cashew butter, cacao powder, coconut oil and salt to the blender. Blitz until smooth. Transfer into the baking tin and use the back of a spoon to spread until smooth.

  4. Melt dark chocolate and pour over fudge. Add your toppings and use your hands to gently press down.

  5. Freeze for 1-2 hours or until hard. Remove from tin and cut into pieces. Enjoy!

Notes: This fudge is best kept in an airtight container in the freezer.
