A Family Friendly Picnic
If we’re planning a get together with all of the kids in tow (six kids and counting!) we love creating a family-friendly picnic. It’s a fun and easy way to snack, and it gets everyone out in the sunshine. Start with our two must-have picnics essentials - our Picnic Basket, complete with a cheeseboard lid and fully insulated basket to keep all your ingredients fresh, and our trusty Lune Roundie - it’s super soft and plush, and the best part is it’s machine washable. Spelt banana bread (see recipe below)
Spelt Banana Bread
Ingredients:
130 grams salted butter, softened
4 ripe bananas mashed
3/4 cup coconut sugar
2 eggs lightly beaten
1 1/2 cup spelt flour
2 tsp baking powder
1 stop bicarbonate of soda
1/2 cup coconut milk (or your choice of milk)
2 tsp vanilla bean paste
1 tsp cinnamon
Method:
Preheat oven to 180 degrees. Line a loaf tin. Cream butter and sugar using an electric beater. Beat in eggs until combined. Add mashed bananas and remaining ingredients. Beat until just combined. Bake for 45 minutes or until banana bread springs bake when you press it. Enjoy with coconut yogurt or butter.
