Our Favourite Comfort Food Recipes
Whenever the weather is a little gloomy, we always crave comfort food. There's nothing better than a delicious bowl of pasta and a warm glass of mulled wine. Our Co-Founder, Emma, shares her favourite recipes to make on cool, rainy days...
Mulled Wine
Ingredients - serves 6
1 bottle red wine
1 orange, sliced into rounds, plus more for garnish
6 whole cloves
3 cinnamon sticks, plus more for garnish
3 star anise
1/4 cup honey
1/2 cup brandy
Method:
In a medium saucepan over medium heat, combine all ingredients. Bring to a simmer not a boil, then reduce heat to medium-low. Simmer gently over low heat for 10 minutes.
Serve warm and garnish with more citrus slices and cinnamon sticks.
Roasted Lemon Pasta Carbonara
Ingredients
1 packet of spaghetti
1 lemon
2 tbsp of salted butter
1/2 cup fresh basil
1 clove fresh garlic, grated
3 eggs, at room temperature, beaten
1 cup grated parmesan cheese
1 cup panko bread crumbs
4 tbsp baby capers
4 strips of prosciutto torn
Salt and cracked pepper
(Chilli oil is a nice addition)
Method:
Heat oven to 180 degrees, and line a baking tray.
Bring a large pot of salted water to the boil.
Sprinkle panko crumbs onto lined tray with capers and lemon cut in half, and roast for 10-15 minutes or until crumbs are golden, baby capers are crispy and lemon is caramelised around the edges. Remove tray from oven and set aside.
Cook pasta as per packet instructions.
Beat eggs in a large bowl, add butter, garlic and parmesan cheese into the egg mix. Place the hot cooked pasta straight into the egg mixture and gently fold the pasta through the egg mix until butter and cheese has melted. Keep gently mixing the pasta until itβs coated and creamy.
Serve into individual bowls or one big pasta bowl. Top pasta with torn basil and prosciutto. Sprinkle with golden panko crumbs and crispy capers. Lastly drizzle plenty of roasted lemon juice on top. Add salt and pepper to taste. Enjoy!
