Pipi Paella Recipe

Ingredients:

4 tsp oil

1 onion diced

4 gloves of garlic crushed

2 tbsp smoked paprika

2 chorizos chopped

2 tomatoes grated

1 capsicum diced

500g chicken thigh

1 bowl of fresh pipis (can use calms, mussels or prawns)

2 cups medium grain rice or Bomba rice

A few sprigs of fresh thyme

A few sprigs of rosemary

2 x fresh lemons cut into wedges

1 tsp saffron

1 cup frozen or fresh peas

1L chicken or seafood stock

Fresh parsley to garnish

How to:

  1. In a large paella pan add oil and salt.

  2. Wait until the pan is nice and hot, then add onion, garlic, rosemary, thyme, capsicum, chorizo, chopped chicken thigh and smoked paprika. Fry until fragrant.

  3. Add tomatoes and saffron.

  4. Spread rice through pan and add stock until the rice is covered.

  5. Simmer for 15-20 minutes or until stock has almost dissolved, but not completely.

  6. Add pipis and cook until they open.

  7. Add pears to the pan for a few minutes.

  8. Garnish with fresh parsley and loads of lemon wedges. Enjoy!
