Greek-Inspired Summer Salad

This is one of my favourite recipes for summer! The flavours are inspired by my childhood growing up in a Greek family. My Yiayia (Grandma) regularly puts out watermelon and feta (or halloumi) to snack on. The sweetness of the watermelon and saltiness of the feta compliment each other, while the fresh mint brings in a hint of coolness.

Watermelon & Mint Salad

Ingredients:

  • 400g diced watermelon

  • 3 sprigs fresh mint, ripped or chopped

  • 100g cucumber, diced

  • 100g Greek feta

  • 1/2 lime, juiced

  • 1 tablespoon extra virgin olive oil

Method:

  1. Combine the watermelon, feta, cucumber and mint in a bowl.

  2. Once mixed well, drizzle over the olive oil and lime juice.

  3. Serve cold on a hot summer day and garnish with extra mint for presentation.

Note: I use Greek feta, its my preference for this type of salad as its crumbly and salty. The quality of your Extra Virgin Olive Oil is important. Make sure you use a good quality fresh olive oil.
