A Festive Cookie Recipe From Our Founders

Spelt Ginger Cookies with Caramel & Sea Salt

Makes 20-25 cookies

Ingredients:

  • 125g unsalted butter, chopped and softened

  • 1/2 cup coconut sugar

  • 2/3 cup golden syrup

  • 2 1/2 cups spelt four

  • 2 tsp ground ginger

  • 1 tsp bicarbonate of soda

  • Caramel from the store or any good homemade caramel.

  • Sea salt flakes

Method:

  1. Preheat oven to 160 degrees.

  2. Cream together in a mixer butter and sugar until pale and creamy. Scrape down sides and add remaining ingredients to the bowl. Beat until a smooth dough forms.

  3. Roll dough onto a floured surface. If the dough is too soft, place it into the freezer for 10 mins.

  4. Using a cookie cutter, cut cookies into shape. Transfer onto a lined baking tray and bake for 10 mins.

  5. Once you take the cookies out get a small teaspoon and lightly press a spot on top of each cookie for the caramel to set in. Do this while they are hot and mouldable.

  6. Once the cookies are cool, spoon a small amount of caramel onto each cookie and sprinkle with sea salt flakes.

    Note: you could use any cookie shape you like. Also try and use a darker caramel so its not to sickly sweet! This is also a perfect cookie for ice cream sandwiches!
