Our Favourite Homemade Granola

I’ve always loved granola… you know the sweet, sugary kind with clusters? Not really all that healthy or good for you! So I started experimenting by making my own. I tried toasting oats, puffed rice and dried fruit, not my favourite. I tested a whole bunch of recipes and then finally I mixed and matched a few to create this Nut Granola. Vegan, grain free, refined sugar free and packed full of good fats, oh and it’s pretty tasty too! I tested it on the whole family and they all love it. We add it to smoothie bowls, yoghurt, on top of muffins or banana bread, and as a crumble mix on top of apple crumble. Enjoy! Nut Granola

Makes one large jar full

INGREDIENTS:

  • 2 cups of shredded coconut

  • 1 cup of walnuts

  • 1 cup of macadamia nuts

  • 1/2 cup of pumpkin seeds

  • 2 tablespoons of honey

  • 4 tablespoons of coconut oil

  • 1 teaspoon of vanilla

METHOD:

Heat oven to 180c. Add all ingredients to a high powered blender or Thermomix. Blend until the mix resembles a nutty crumble (about 5 sec, speed 5 in the Thermomix). Spread evenly onto a baking tray and roast for 10 minutes. Watch the granola as it roasts because nuts and coconut can turn on you in the blink of an eye! If you like your granola a little toastier then roast a little longer.

Serve on smoothie bowls, yoghurt or on top of cakes and muffins. You can also use this as an alternative to crumble on top of apple crumble by simply adding poached granny smith apples to a baking dish and sprinkling raw nut granola on top. Roast for 10 minutes.

Notes: at the blending stage you can add 1 tablespoon of chia seeds or almonds. You might even like to add cinnamon or nutmeg. You can also switch honey for maple syrup or rice malt syrup.
