Steak & Chimichurri
Josh, my husband, has made this recipe over and over, and it never disappoints. Once you have had Chimichurri on steak, you will never go back. It's the perfect Father's Day meal! You can add grilled prawns for extra wow factor.
Note: Leftover Chimichurri on eggs the next day is a dream come true!
Ingredients
-Good quality rump steak cooked to your desire. Josh and I do medium rare(hot pan for 2 mins on either side and rest for 10 mins).
- 4 potatoes diced, par-boiled, and cooked over the fire in a pan with plenty of olive oil & fresh thyme.
Chimichurri
1 red chilli
2 -3 cloves garlic
1 big bunch of parsley
1-2 tsp dried oregano
2 tbsp red wine vinegar
1/2 cup olive oil
Salt and pepper to taste.
Instructions
Finely hand chop (don't blitz it in a blender, not yum) chilli, garlic, parsley and add it to a small bowl.
Add dried oregano, red wine vinegar, olive and salt and pepper to the bowl.
Mix until combined.
Drizzle over steak once steak has rested.
Serve with salty fried potatoes and greens of your choice.
