Burrata Pizza
One summer afternoon, while lazing poolside in Puglia with my husband Josh, he turned to me and showed me this recipe for Burrata Pizza… It looked mouthwatering! So he decided to give it a crack, especially since we had the perfect outdoor pizza oven and had stocked up on the best Burrata from our favourite cheese shop, Dicecca. Such simple ingredients, but they really pack some flavour.

Ingredients
Makes 1 Pizza
150g Burrata Cheese
Approx 400g Cherry Tomatoes
2 Tbsp Extra Virgin Olive Oil
1 tsp Balsamic Vinegar
1 Tbsp of minced Garlic
3 Tbsp fresh Basil (chopped)
Pinch of Salt
Black Pepper
We had store bought Pizza Dough bought from the local grocery store.
To Make Marinated Tomatoes
Add Tomatoes, Garlic, Basil, Balsamic Vinegar and Olive Oil to a small bowl along with the diced tomatoes. Adjust the seasoning to your taste after mixing everything together.
Pizza
Place the marinated tomatoes and the ball of burrata cheese on the base of the pizza dough.
Add some Olive Oil to the Burrata Cheese.
Top with a touch of Sea Salt and Pepper
Pop pizza into the oven for approximately 35mins or until cooked.
