Lemon Sorbet Cups

Our founders Vic and Emma's recent trip to Italy has left us feeling inspired (and a bit jealous). With summer well and truly here, we decided to bring a piece of Italy to HQ with these divine Lemon Sorbet Cups. 

They are super easy to create and make the perfect addition to your summer day!

Ingredients

Makes 3

3 Large Lemons 
Approximately 800ml of Lemon Sorbet
3 Large Tablespoons of Marscapone 
Mint Leaves for Decoration 

Steps

1. Cut a tiny part at the bottom of the lemons so they stand flat, cut the top off, scoop out the flesh of the Lemons, and place in the freezer.
2. Place the Sorbet and Mascarpone in a bowl (we found it easier to let it soften beforehand).
3. Mix them well.
4. Take the Lemon shells out of the freezer and fill them with Sorbet mix (Make sure you leave enough mix in the bowl to fill the tops). 
5. Place mix and Lemon shells in the freezer overnight. 
6. Take out of the freezer and fill the Lemons at the top with the leftover Sorbet mix.
7. Decorate with Mint leaves and serve.
