10 Minute Prawn Tacos

One of the reasons I love Summer here in Australia is the fresh Summer food. The stone fruit is sweet, the mangos sweeter and the seafood is fresh! I love fast fresh dinners like this one. I would like to mention that chilli is optional if you are making this for little ones and chicken would be a great substitute for prawns.

Recipe

Makes 10 

Salsa 
1 red onion 
2 tomatoes 
1 mango 
1 green chilli 
1 yellow capsicum 
1 big buch of coriander 

3 limes 
2 tbsp olive oil 
Salt and Pepper 
1kg green prawns peeled 
2 tbsp smoked paprika 
1 tbsp chilli flakes 
1 tsp turmeric 
2 tbsp olive oil
Flour tortillas 

In a large bowl mix prawns, olive oil and dried spices. Set aside. Dice all salsa ingredients and mix well. Heat tortillas on the grill and set aside. Cook prawns add set aside. Assemble your tacos and enjoy.
