A Simple Beach Breakfast

If the weather is looking good and I’m planning to head to the beach on the weekend, I love to prepare breakfast in advance for my little family. My go-to easy, but oh-so delicious beach breakfast recipes are these blueberry brioche rolls and iced filter coffee. They’re perfect to enjoy in the sunshine or on-the-go!

Blueberry Brioche Breakfast Rolls

Ingredients:

Dough

100g white sugar

2 tsp dried instant yeast

2 eggs

100g full cream milk

370g Plain Flour (bakers flour is best)

50g unsalted butter

1 tsp natural vanilla extract

1 pinch sea salt

Filling

250g blueberries (if frozen that’s fine just thaw and pat dry before using)

70g white sugar

30g plain flour

Brushing

1 egg lightly beaten, for brushing

Method:

  1. Slightly warm the sugar, yeast, eggs & milk in a saucepan and stir for 3 minutes

2. Add all the remaining dough ingredients and knead dough for 3 minutes

3. Prove the dough for 4 hours (place in a large bowl and cover in a warm place, it should at least double).

4. Line baking trays

5. Turn out the dough onto a work surface and roll into a rectangle (30x45cm and about 5mm thick) and cut into 16 evenly sized rectangles. Set aside while you make the filling.

6. Mix all the filling ingredients together and scoop an even amount into all the rectangles.

7. Work one rectangle at a time, pinch all 4 corners together so you encase the filling and seal well. Then roll into a ball and place on the tray, sealed part down. Allow space between each ball and leave to prove for another hour.

8. Preheat oven to 160C, brush the egg evenly over each bun. Bake for 25minutes 160C or until lightly golden.

9. Cool completely before serving.

Iced Filter Coffee

How to make it:

  1. Brew black coffee to your liking and chill over night - I’ve used a SMEG percolator and All Press beans (ratio is two tablespoons of coffee ground to medium fine per 2 cups).

2. Poor black coffee over ice

3. Add milk (and a tiny pinch of vanilla bean paste - this is optional)

COOL TIP - Don’t stir - I am convinced it tastes better when the milk and coffee is still mixing.
