How to Make a Warm Cheese Platter

The cooler months have set in here in Australia. We’re very lucky because it’s not actually that cold, around our way its 21 degrees today and I could still really have a dip in the sea… The sunsets are dreamier and pinker, and the whales are jumping, so it seemed like a good time to grab some friends and gather around a warm cheese platter. I was inspired by my friend Sarah Glover (the ultimate fire cooking goddess) to make a warm and creamy cheese platter by the sea! Think cheese fondu but with a twist, and baked over a fire. You’re going to love this - so simple and a real crowd pleaser!

Warm Cheese Platter

Ingredients

1 x wheel of Brie cheese

1 x mozzarella ball

1 x block of halloumi cheese

1 x jar of honey with honeycomb

Handful of fresh thyme

Few sprigs of rosemary

6-8 slices of prosciutto

1 x loaf of sourdough bread, sliced

For the warm olives:

1 x jar of Sicilian olives

1 tsp mixed herbs

1 tbsp olive oil

What you’ll need:

A skillet for over the fire

A grill to go over the fire (we got ours from the camping store)

How to make it

Start your fire and wait for the flames to chill out a little. You want nice hot coals, not a blazing fire…

For the warm olives, heat all ingredients together in a pan until fragrant. Serve and enjoy straight away.

Toast sourdough bread over the grill over the fire so it’s golden and toasty. Remove the bread from the grill and set aside.

Slice the mozzarella and halloumi cheese, and sprinkle around the skillet.

Place the brie cheese in the centre.

Fill in any small holes with prosciutto.
Place skillet over the fire and sprinkle with fresh herbs.

As the cheese starts to melt together, place chunks of honeycomb over the cheese, and drizzle with extra honey.

Once the cheese has melted, remove from the heat and enjoy with toasted sourdough bread.

Note: you could cook this at home over any cooktop or BBQ.
