Pomegranate Christmas Mimosas

Gosh these are fresh! Summer is HOT here in Australia so these Pomegranate Christmas Mimosas are light, bubbly and full of fun. I also enjoy that they can be made a day ahead of time. Then all you have to do is pop your sweet fragrant ice cube into a pretty glass, pour the champagne over and it's a party.

I personally do not enjoy making complicated cocktails while trying to welcome and settle a house full of guests on Christmas Day. These are fast, fun and make a big impact. Need a pomegranate seed removal hack? Simply cut the pomegranate in half, face the open side down into a large bowl and tap it with a wooden spoon. They’ll all come spilling out! Recipe 

Makes 6 drinks
1 pomegranate (seeds removed)
1 bottle of champagne (or sparkling apple juice) 
6 small sprigs of rosemary 
1/4 cup apple juice 
1/4 cup of pomegranate juice 
1 x large square ice cube tray. 

Place a tbsp of pomegranate seeds in the bottom of each ice cube. Place a rosemary sprig in each ice cube like a tiny Christmas tree. In a jar blend the two juices and pour over the pomegranate seeds & rosemary. Freeze overnight. When ready to serve, place a large ice cube into each glass, pour over champagne and enjoy!
