The Perfect Picnic Salad

Ingredients (serves 6)

2 roast chickens, shredded (approx 600g)

2 cups celery, chopped

3 shallots, chopped finely, plus extra to garnish

1 1/2 cups curly parsley, chopped finely, plus extra to garnish

4 ripe mangoes, cubed

1 cup high quality mayonnaise

1/2 cup greek yoghurt

Salt and pepper

6 hard boiled eggs, cut into quarters (optional)

1 cup toasted macadamias, chopped roughly

Method

  1. Combine mayo, greek yoghurt, salt and pepper in a small bowl. Whisk until smooth.

  2. Add chicken, celery, shallots, parsley and mango to a large mixing bowl, fold through mayo/yoghurt, mix until well combined. Add boiled eggs and gently stir until incorporated.

  3. Add salad to a serving bowl and cover with macadamias. Garnish with shallots and parsley. Serve and enjoy!

Note: For the most delicious flavour, prepare this salad the day before you plan to eat it and let it marinade overnight.
